Ingredients

• 2 cups organic couscous, preferably whole wheat
• 2 cups water
• 2 tablespoons extra virgin olive oil
• 2 tablespoons red wine vinegar
• 2 tablespoons lemon juice
• ½ teaspoon dried oregano
• 1 handful tomatoes of various types
• ½ cucumber
• ½ red onion
• 1 spring onion
• 1 handful fresh arugula
• ½ avocado
• salt
• black pepper to taste
Step-by-step preparation
47. Heat the water in a medium pot and when it starts to boil, add the couscous, ½ tablespoon of olive oil and remove from heat. Cover the pot and let it rest for five minutes. After this time, open the pot and mix the couscous with a fork to make it loose.
48. For the dressing, make a sauce with a hand blender. Add the rest of the olive oil, vinegar, lemon juice and dried oregano. Once done, set aside.
49. Wash the tomatoes, cucumber, arugula and spring onion.
50. Chop the onion into thin strips, quarter the tomatoes and cucumbers and chop the spring onion before placing them in a large bowl. Add a little of the dressing and mix well.
51. Mix the couscous with the salad in the same bowl.
52. On a plate, place the arugula as a base and serve the couscous salad on top.
53. For the finishing touch, we cut the avocado in half without removing the seed and squeeze a little lemon juice over it to reduce oxidation. Using a ceramic knife, we cut half of the avocado into thin strips and place them on the salad. Pour the rest of the dressing over it. Eat!
Notes
Why not add chickpeas or beans to this salad to provide an additional source of protein and complement both of its amino acids? Give it a try!
