Ingredients
• 1 head of romaine lettuce
• 50 grams of lamb's lettuce
• 1 red onion
• 800 grams of chicken breast
• 3 eggs
• 1 cup of breadcrumbs
• 50 grams of shaved parmesan cheese
• Olive oil
• Pepper
• Salt
• FOR THE SAUCE
• 3 anchovy fillets in oil
• 60 grams of Roquefort cheese
• 60 milliliters of olive oil
• 1 lemon

1. Boil the eggs
Cook 2 eggs in salted water for 10 minutes from the moment it starts to boil, drain them and refresh them with cold water. Peel them and then cut them into wedges.

2. Separate the leaves
Separate the lettuce leaves, wash them, dry them and cut them into pieces. Remove the roots from the lamb's lettuce, wash them and drain them as well. 3. Chop the onion
Peel the onion; cut it first in half and then into thin julienne strips. Place it in a bowl, cover with water, add a pinch of salt and let it rest until ready to use.

4. Coat the chicken breast
Clean the chicken breast and season with salt and pepper. Coat it with the remaining beaten egg and breadcrumbs; press down lightly with the palm of your hand so that it adheres.

5. Fry the chicken
Heat 150 ml of oil in a frying pan and fry the chicken on both sides until golden. Remove with a skimmer and drain on absorbent paper.

6. Make the anchovy sauce
Squeeze the lemon and filter the juice. Drain the anchovies and place them in the blender jug. Add the Roquefort, lemon juice and oil, and blend until smooth.

7. Serve the salad
Mix the lettuce with the lamb's lettuce, the drained onion and the parmesan, and divide this salad between four plates. Cut the chicken into wide strips and place them on top, with the hard-boiled eggs. Serve it with the sauce on the side.

Ideas for your Caesar salad with anchovy sauce

• If you prefer your salad lighter, make the chicken grilled instead of battered and fried.
• Blue cheese, gorgonzola, goat cheese... are also excellent options for preparing the anchovy sauce.
• Give the salad a crunchy touch by adding some bread croutons.
